Superfood Chocolate Bar

This recipe is perfect when you are craving something sweet yet healthy. There are also the perfect on-the-go breakfast or mid-afternoon snack.They are so filling and nutritious because they contain various superfoods like chia seeds, hemp seeds, flax seeds and pumpkin seeds. These are great source of omega-3 fats, protein, minerals and vitamins.
If you like to run or exercise, these bars will keep you energized during your work out. What I especially like is that you can easily adapt this recipe with what you have on hand in your pantry, the possibilities are endless (for example substitute dried raisins with any other dried fruits such as dried apricots,..). 

    • 1 cup dates 
    • 1 cup walnuts
    • 1/3 cup chia seeds
    • 1/3 cup  flax seeds
    • 1/3 cup hulled hemp seeds
    • 1/4 cup coconut flakes 
    • 1/3 melted dark chocolate
    • 3/4 cup pumpkin seeds
    • 1/2 cup raisins
    • 2 tablespoons melted coconut oil

    • Serves about 10 bars

  • Put the dates and 2/3 of the raisins in a food processor and mix them together until you have a paste.
  • Add the remaining ingredients in the food processor but keep a little bit (+/- 1/3) of each ingrdeients to add in the mix later. Mixer until combined.
  • At the end add the remaining ingredients you kept and push on the pulse button 2-3 times to cut  them slightly. The goal is to keep a little crunch.
  • Press the mixture firmly with your hands in a pan lined with baking sheet. Place in the fridge for a couple of hours to firm up.
  • Cut into bars.
  • They will last for up to 1-2 weeks if kept in the fridge.
